In this recipe, fresh sliced mushrooms are tossed with an easy marinade dressing and stored in the fridge for up to 3 days to get maximum flavor. Once ready it can be served chilled or at room temperature.
Wipe the outsides of the mushrooms with a cloth or paper towel to remove any dirt.
Mix together the marinade in a bowl: olive oil, vinegar, minced garlic, parsley, chili flakes, honey, salt and pepper.
Add sliced mushrooms to a large shallow dish. Drizzle the marinate overtop and toss together.
Cover with a lid or plastic wrap and place in the fridge for minimum 1 hour, or up to 3 days, stirring occassionally.
Use slotted spoon to transfer to a serving dish. Discard excess marinade.
Mushrooms can be served chilled or at room temperature. Serve and enjoy!
Recipe Notes:
Mushrooms are like a sponge and will soak up excess water. For this reason, it's best to use a damp cloth and wipe the outsides of them to clean, versus rinsing under water.
Save the leftover marinade for another recipe. Use it as a salad dressing, or freeze it in an ice cube tray for a future marinated vegetable salad.
