An easy all-in-one dinner that's ready in 30 minutes. Chicken breasts are browned in a frying pan, then baked in the oven with salsa, mozzarella and tortilla chips.
In a large bowl, mix together 1 Tbsp oil, chili powder, salt and pepper.
Add the chicken breasts to the bowl and toss them to coat evenly.
Add 1 Tbsp of oil to a frying pan over medium high heat. Once hot, add the chicken breasts and brown on each side for 2 minutes.
Place the browned chicken in a baking dish. Pour the salsa over top and spread evenly.
Sprinkle the mozzarella chesse and crushed tortilla chips over top.
Bake for 20-25 minutes, or until chicken is fully cooked.
Scoop on to dishes, serve and enjoy!
Recipe Notes:
Leftover chicken can be stored in an airtight container in the fridge for up to 3-4 days. Reheat in the microwave or toaster oven for an easy lunch.
For a spicier meal, use hot salsa and drizzle cooked chicken with hot sauce.
The best way to tell if the chicken is done is with a meat thermometer. Poke it through the center of the chicken breast to read the temperature. Once it reaches 165°F internally, it’s cooked.
For crispier chicken coating, turn the oven setting to broil for 3-5 minutes, keeping a close eye on the chicken during this time (so that it doesn’t burn).
Tortilla chips on leftover chicken will absorb moisture and become soggy. Add freshly crumbled chips before reheating leftovers in the microwave.
