Saute the diced apples in a pot over medium heat with cooking oil or butter. Cook until the apples are soft when poked with a fork.
Add 1 cup of old-fashioned rolled oats to the pot for 1 minute, stirring often.
Add in 4 cups water, ½ tsp ground cinnamon, ¼ tsp salt, and ⅙ tsp ground nutmeg. Stir everything together.
Bring this to a boil over medium-high heat then reduce heat to let it simmer. Cook for about 5 minutes, until the oats have absorbed all the liquid. Stir occasionally during this time (do not over-stir or oats will get mushy).
Remove from the heat and stir in ¼ cup maple syrup. Add oats to serving bowls, add your favorite toppings, serve, and enjoy!
