Cinnamon sugar baked donuts are fluffy, cakey, sweet and oh so good! Much easier and healthier than a traditional fried donut, these ones are baked in a donut pan for an easy homemade treat.
Preheat oven to 350°F. Lightly coat a donut pan with butter or oil and a paper towel.
In a large bowl, combine flour, coconut sugar, baking powder, cinnamon, nutmeg, and salt. Mix together and set aside.
In a separate bowl, combine milk, eggs, olive oil (or melted butter), and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix together.
Fill the batter into the donut pan ½ full (The batter will rise during baking). Bake for 16-18 minutes or until toothpick comes out clean when poked through the center. Remove from oven, let cool 10 minutes then remove from pan and place on a rack to cool.
In a bowl combine coconut sugar and cinnamon. In a separate small bowl, melt 2 Tbsp of butter in the microwave.
Brush melted butter onto the baked donuts.
Sprinkle the cinnamon sugar on top. Serve immediately or place in an airtight container for up to 1 week.
