In this recipe, fresh spinach is combined with strawberries, red onion, and crunchy croutons. It's tossed with a homemade honey dijon dressing and sprinkled with feta cheese.
Combine dressing ingredients in a bowl: olive oil, honey, lemon juice, vinegar, and dijon mustard.
Add spinach, strawberries, red onion, feta and croutons to a serving bowl. Drizzle the salad dressing on top and toss everything together.

Recipe Notes:
For maximum freshness wait to add the dressing until just before you plan to serve. The dressing can be prepped and stored in a mason jar in advance, and the salad can be prepped without dressing and stored covered in the fridge. This salad tastes best when served fresh.Optional Additions/Variations
Substitute the breadcrumbs with 1 cup of chopped walnuts for a different crunch. Sunflower seeds or pumpkin seeds would also work.
Use blackberries, blueberries or raspberries along with the strawberries for even more sweetness.
Substitute honey for maple syrup. You can also use apple cider vinegar in replacement for food-grade vinegar.
Add chopped celery, carrots, sprouts, and sliced radishes.
Use mixed greens or arugula spinach blend for the salad base.
