Strawberry Spinach Salad
A vibrant, fresh salad made with baby spinach, sweet strawberries, salty feta, and crispy bacon, tossed in a maple balsamic dressing. Perfect for summer BBQs, brunch, and potlucks!

Ingredients

baby spinach

strawberries

sliced (about 2 cups)

thinly sliced red onion
▢

crumbled feta cheese

cooked and crumbled bacon
Dressing:
▢
¼
cup
olive oil
▢

balsamic vinegar

maple syrup

or honey

Dijon mustard

Instructions
In a small bowl, whisk together the dressing ingredients: olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper.
In a large salad bowl, combine the spinach, strawberries, red onion, feta, and bacon.
Drizzle the dressing overtop just before serving and gently toss to coat. Serve immediately.

Notes
Add toasted nuts like pecans or almonds for crunch.
Swap feta for goat cheese if you prefer.
