Preheat your oven to 425°F. Line a baking sheet with parchment paper.
In a small bowl, mix 2 tablespoons dijon mustard, 1 teaspoon mayonnaise, and 2 minced garlic cloves. In a separate bowl, mix ½ cup breadcrumbs and 1 teaspoon Italian seasoning.
Pat the 4 pork chops dry with paper towel on both sides. This will help the spices to stick better. Now season pork chops with 1 teaspoon salt and 1 teaspoon black pepper.
Heat 1 tablespoon olive oil in a skillet over medium-high heat. Once hot, add the coated pork chops and sear for 1-2 minutes on each side until golden brown. This will help to seal in flavors.
Place the pork chops onto to the baking sheet. Bake for 15-18 minutes, or until they reach an internal temperature of 145°F when poked with a meat thermometer.
