Cauliflower rice is a perfect substitute for regular white or brown rice. It can be used in stir frys, burritos, cauliflower crust pizza and more.

medium head of cauliflower
Instructions
Cut the cauliflower into chunks and remove the stem. Break into smaller pieces with your hands. Discard the leaves.
Add half of the cauliflower to the food processor.
Turn to the low setting and blend for 30 seconds. Once it looks like rice stop there, otherwise it will get mushy.
Repeat the steps with the other half of the cauliflower.
Use immediately in a recipe or store in an airtight container in the fridge for 1-2 days or the freezer for up to 2-3 months.
