Add the sliced oranges, pomegranate seeds (or fresh cranberries), and fresh mint to a bundt cake pan or ice cube tray (skip the orange slices if using the ice cube tray they will be too big). Now pour in enough juice to fill the bundt cake pan less than halfway. Do not fill to the top or it may not fit in your punch bowl! Give it a gentle stir then place it in the freezer overnight.
Note: The pomegranate seeds will sink to the bottom, while orange slices and mint leaves will float to the top while freezing.
Now add 3 cups cranberry juice, 3 cups ginger ale (or lemon lime soda), 1 ½ cups orange juice, 1 ½ cups pineapple juice (or tropical juice) to a large punch bowl. The punch bowl should be LARGE to hold the big ice cube! Side note: I picked up my bowl from the thrift store for only $2!
NOTE: If your punch bowl is smaller, you might want to put half of the punch in first, then add the ice cube, and then pour in the rest of the punch so that it doesn’t spill over.
Now gently add the ice cube into the center. Use a soup ladle or small cup to scoop the punch into glasses to serve.
