In a frying pan over medium heat, add 1 tablespoon cooking oil and 2 cups of chopped sweet potatoes. Cook until the cubes are soft when poked with a fork. Scoop into a bowl and set aside for now.
Now add 1 tablespoon olive oil, 3 minced garlic cloves and ½ cup chopped onion. Cook until onion turns translucent. Scoop the onion to the side of the pan.
Now add the 1 lb ground beef and break it up into small pieces. Cook until ground beef is no longer pink (about 2-3 minutes).
Next, sprinkle the 1 teaspoon onion powder, 1 teaspoon garlic powder, ½ teaspoon chili powder, ½ teaspoon paprika, ½ teaspoon salt and ¼ teaspoon ground black pepper over top of everything. Mix it all together and cook another 2-3 minutes. Stir the mixture occasionally.
Turn the heat to low and sprinkle the top with mozzarella cheese. Cover the pan with a lid to help the cheese melt. Serve immediately.
