Preheat the oven to 400°F. In a medium bowl, mix together ¼ cup honey, ¼ cup dijon mustard, 1 Tbsp whole grain mustard, 1 Tbsp olive oil, 1 tsp Italian seasoning, ½ tsp garlic powder, ½ tsp salt, and ¼ tsp ground black pepper.
Place 8 chicken thighs in a baking dish. Pour the honey mustard sauce over top. Use a silicone brush to spread the sauce evenly over top of the chicken.
Place the chicken in the oven to bake for 40-45 minutes, or until the chicken is fully cooked and reaches 165F internally when poked with a meat thermometer. You can spoon the honey mustard overtop of the chicken halfway through baking.
Once baked let cool 10 minutes before using a spatula to transfer to plates to serve.
