Kiwi Citrus Dressing
This fresh kiwi citrus dressing is tangy, sweet, and blended in just 20 seconds—perfect for summer salads or grilled chicken.

Ingredients

ripe kiwis

peeled and chopped
½
cup
orange juice

Tbsp
olive oil
2
Tbsp
honey
2
Tbsp
fresh mint
1
Tbsp
lime juice
1
Tbsp
white vinegar
Pinch
of salt
Instructions
Add all ingredients to a blender: kiwis, orange juice, olive oil, honey, mint, lime juice, vinegar, and salt.
Blend for 20 seconds or until smooth. Scrape down the sides and blend again if needed.
Let sit 15 minutes before serving. Store in fridge up to 1 week. Shake well before using.
Recipe Notes:
Use ripe kiwis for the best flavor
Let sit after blending to help flavors meld
Shake before using—ingredients will separate
Works well as a chicken marinade, too
Swap lime juice for lemon if preferred
