Fresh strawberries, lemon juice, and sparkling water come together in a light, fizzy drink that’s naturally sweet, easy to prep ahead, and perfect for summer.
In a saucepan, combine 2½ cups strawberries, ¾ cup sugar, and ½ cup lemon juice. Cook 10–15 minutes until soft and syrupy. Mash or blend. (Optional: strain for a smooth syrup.)
Cool syrup completely.
Add syrup to a pitcher with the remaining ½ cup strawberries and lemon slices.
Just before serving, stir in 6 cups of club soda.
Serve over ice.
