Sweet and Sour Sausage
This sweet and sour sausage dinner recipe has meat and veggies and can be cooked all in one frying pan. So easy to prep and dinner is served in under 30 minutes - perfect for busy weeknights.

Ingredients
1
package of sausage
½
yellow onion
-
chopped
2
carrots, shredded
-
(about 1 cup)
1
can of pineapple chunks
-
(approx 400 ml)
1
Tbsp
cornstarch
1
tsp
ground ginger
¾
cup
pineapple juice
-
(from canned pineapple)
2
Tbsp
soy sauce
cooked rice
-
to serve
Instructions
Using a rice cooker, cook enough rice for your family. Set aside.
Open can of pineapple and drain, saving the juice for the recipe.
In a small bowl, mix together the cornstarch and ginger. Add in ¾ cup of pineapple juice, and soy sauce. Whisk until smoooth. Set aside.
Using
kitchen scissors
(or a sharp knife), slice the sausage into bite-size pieces
Add oil to a
frying pan
over medium-high heat. Add in sliced sausage and cook until the sides brown, about 3-5 minutes.
Add in chopped onions and shredded carrots. Mix together.
Pour in the sauce and bring mixture to a gentle boil, lower heat to let simmer for 2-3 minutes or until sauce has thickened.
Remove
frying pan
from heat and serve on plates with cooked rice.
