Instructions
Preheat your oven to 375°F.
In a frying pan, cook 1 lb of lean ground beef until browned, then remove any excess grease by swishing a folded paper towel around with a spatula. Stir in 1 packet of taco seasoning.
In the frying pan with the cooked ground beef, mix in 2 cups salsa, 1 cup black beans, and 1 cup corn. Add in 1 cup of shredded cheese and mix everything together.
In a 9×13 baking dish, spread 2 cups crushed tortilla chips evenly at the bottom of the dish.
Spread the cooked ground beef mixture on top, then sprinkle on the remaining 1 cup of shredded cheese.
Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and all ingredients are warmed through. The taco casserole can now be served as-is or if you want to add fresh toppings, see the next step (step 6).
Sprinkle on fresh toppings like green onion, tomatoes, olives, shredded lettuce, salsa and sour cream. Scoop into bowls and it’s ready to serve.
