With its sugar cookie crust, cream cheese frosting, and fresh fruit toppings with whipped cream arranged in the shape of the American flag, this dessert is sure to be a hit with your friends and family.
Let the 16 oz tube of refrigerated sugar cookie dough sit at room temperature for 1 hour. This will make it easier to roll out. Spray a baking sheet with non-stick cooking spray, press the cookie dough, and form it into a rectangle. If using a small baking sheet, you can spread it to the edges.
Bake at 350℉ for 12-15 minutes, or until edges are golden brown. Use a pizza cutter or knife to straighten the edges if needed. Let this cool completely before moving on to the next step.
In a large bowl, add 8 oz softened cream cheese, with 2 Tbsp softened unsalted butter, 2 tsp vanilla extract, and 2 cups powdered sugar. Beat the ingredients using a hand mixer. It will start clumpy then turn smooth and creamy after 2-3 minutes.
Spread the cream cheese frosting evenly on the cooled sugar cookie with a spatula.
Use 1 cup of fresh blueberries to create a small rectangle representing the stars of the American flag. Use 2 ½ cups of fresh sliced strawberries to fill the rest of the space by placing them in tight rows. Use extra berries if needed.
Just before serving, use an 8 oz can of whipped cream to create the white stripes, then serve immediately. If saving for later, don’t use the whipped cream just yet. Place your fruit pizza in the fridge covered with plastic wrap until you’re ready to serve, then add whipped cream stripes.
Recipe Notes:
Once the fruit pizza is assembled, it’s important to refrigerate it until you’re ready to serve. Cover with plastic wrap and place it in the refrigerator.
Don’t add the whipped cream until just before serving. I recommend serving the same day that you make the recipe.
Let the cream cheese soften to room temperature for 1-2 hours before using. This will create a smoother consistency. Do the same with the butter.
To slice your fruit pizza, use a sharp knife or pizza cutter. Clean the knife between cuts to keep each slice nice and clean.
I don’t recommend using frozen berries. As the fruit thaws, it will become runny and make a mess.
