This Italian salad dressing recipe is made with simple ingredients and can be customized easily to your tastes. Drizzle it on salads or use it as a marinade.
In a small bowl or mason jar combine ¾ cup extra virgin olive oil, ¼ cup red wine vinegar, 1 tsp granulated sugar- or honey, 1 minced garlic clove, 1 tsp dried parsley, 1 tsp dried basil, ½ tsp dried oregano, ½ tsp salt, ¼ tsp ground black pepper, and ¼ cup parmesan cheese - optional.
Whisk all ingredients together until well combined. You can also add these ingredients straight into a small mason jar, seal it, and shake vigorously until it emulsifies.
Taste the dressing and adjust with more seasoning if needed. Add extra garlic, basil, dried oregano, or salt and pepper. If you prefer a sweeter dressing, add a pinch more sugar.

Store in an air tight container in the fridge for up to 10 days.Olive oil will naturally start to solidify when it's stored in the fridge. Just give the dressing a shake and let it sit at room temperature for a few minutes to help it melt.
