Sheet Pan Gnocchi and Sausage

bag shelf-stable gnocchi

yellow onion

thinly sliced

bell peppers

zucchini

Instructions
Preheat oven to 425°F and line a rimmed baking sheet with parchment paper.
Add 1 bag uncooked gnocchi, ½ sliced onion, 2 cups sliced bell peppers, and 2 chopped zucchini to the sheet pan.
Add 4 sliced smoked sausages and spread everything into an even layer.
Drizzle with 3 Tbsp olive oil, then sprinkle 1 Tbsp Italian seasoning, 1 tsp salt, and 1 tsp black pepper. Toss to coat.
Roast for 25 minutes, stirring halfway through to brown evenly.
Top with grated parmesan and serve warm.

Use shelf-stable gnocchi for the best crispy texture.
Keep ingredients in a single layer to promote roasting.
Stir halfway for even browning.
Store leftovers in the fridge up to 3 days and reheat in the oven or air fryer.
