Tuscan Tomato Basil Chicken Overview
This recipe takes Tuscan-inspired flavors and creates a delicious chicken recipe using fresh basil, sun-dried tomatoes and a creamy parmesan sauce.
The chicken is cooked first, then transferred to a plate. Next the sauce is created with chicken broth, heavy cream, sun-dried tomatoes, and spices. Freshly grated parmesan cheese and chopped basil are stirred in just before the chicken is added back to the pan. From start to finish, everything is ready in under 30 minutes.
Recipe Ingredients
- 4 boneless skinless chicken breasts
- salt and pepper – to season chicken
- 2 Tbsp olive oil
For the Sun-Dried Tomato Cream Sauce
- 4 minced garlic cloves
- ½ cup chicken broth
- 1 Tbsp all purpose flour
- 1 cup heavy cream
- ½ cup sun-dried tomatoes in oil – plus extra 1 Tbsp oil from jar
- 1 Tbsp tomato paste
- ½ tsp dried oregano
- ½ tsp red pepper flakes
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup chopped fresh basil
- ½ cup freshly grated parmesan cheese

How To Tuscan Tomato Basil Chicken

STEP 1: Slice the 4 chicken breasts into strips lengthwise. Season them with salt and pepper. Heat a large skillet with 2 Tbsp olive oil. Sear the chicken on each side for about 3-4 minutes, or until it turns crispy golden brown. Transfer to a plate.
STEP 2: Add 4 minced garlic cloves and cook 30 seconds. Next add ½ cup chicken broth and 1 Tbsp all purpose flour. Slowly stir and let it thicken.
STEP 3: Add in 1 cup heavy cream, ½ cup sun dried tomatoes, 1 Tbsp sun dried tomato oil, 1 Tbsp tomato paste, ½ tsp dried oregano, ½ tsp crushed red pepper flakes, ½ tsp salt and ¼ tsp ground black pepper. Let this simmer on low heat for about 2-3 minutes, until it thickens.
STEP 4: Remove the skillet from heat and stir in 1 cup fresh chopped basil, and ½ cup freshly grated parmesan cheese. Add the cooked chicken pieces back to the pan and scoop the sauce over them. Transfer everything to plates to serve and enjoy.
Recipe Tips
- Slice the chicken strips into similar sizes so that they cook evenly.
- Sun dried tomatoes can be sliced or kept whole. Same with the fresh basil.
- Use fresh parmesan cheese and not the canned store-bought version. This will help to create a creamier sauce.
How To Store Leftovers
- Refrigerate – Leftover chicken can be stored in an airtight container in the fridge for 2-3 days and reheated in the microwave or on the stove.
