Ground beef sweet potato skillet is an easy one-pot dinner. Chopped sweet potato, ground beef, onion, and spices are cooked in a frying pan and topped with mozzarella cheese. This is a great recipe for those lazy weeknights when you want something quick and fast.
Ground Beef Sweet Potato Skillet Overview
Ground beef and sweet potatoes make this recipe easy and delicious. First, the sweet potato is chopped small (so that it cooks evenly an fast) and then sauteed in the frying pan. Next, onion and ground beef are cooked with a variety of spices. Everything is mixed together and topped with mozzarella cheese.
This is a quick and easy dinner that's ready in under 20 minutes. You can serve this on it's own, or add a side of rice, pasta or quinoa.
Recipe Ingredients
- 2 Tbsp cooking oil - divided
- 1 lb ground beef
- 2 cups sweet potato - peeled and cut into cubes
- 3 garlic cloves - minced
- ½ cup yellow onion - diced
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp ground black pepper
- 1 cup shredded mozzarella cheese - optional
How To Make Ground Beef Sweet Potato Skillet

STEP 1: In a frying pan over medium heat, add 1 tablespoon cooking oil and 2 cups of chopped sweet potatoes. Cook until the cubes are soft when poked with a fork. Scoop into a bowl and set aside for now.
STEP 2: Now add 1 tablespoon olive oil, 3 minced garlic cloves and ½ cup chopped onion. Cook until the onion turns translucent. Scoop the onion to the side of the pan.
STEP 3: Now add the 1 lb ground beef and break it up into small pieces. Cook until ground beef is no longer pink (about 2-3 minutes).
STEP 4: Next, sprinkle the 1 teaspoon onion powder, 1 teaspoon garlic powder, ½ teaspoon chili powder, ½ teaspoon paprika, ½ teaspoon salt and ¼ teaspoon ground black pepper over top of everything. Mix it all together and cook another 2-3 minutes. Stir the mixture occasionally.
STEP 5: Turn the heat to low and sprinkle the top with 1 cup mozzarella cheese. Cover the pan with a lid to help the cheese melt. Serve immediately.
Recipe Tips
- Cut the sweet potato into small cubes. The smaller they are, the faster they will cook.
- Any kind of cheese will work here. Feel free to swap the mozzarella with cheddar cheese, marble cheese, monterey jack cheese, parmesan or feta.
- The cheese might not melt easily – If needed, just add a lid or plate to the top of the frying pan (removed from heat) for 1-2 minutes. It should easily melt then.
How To Store Leftovers
- To Refrigerate – The leftovers can be stored in an airtight container in the fridge for up to 4 days.
- To Reheat – Reheat in a pan on the stove or the microwave until warmed through.
