POTATOES: I used red potatoes for this recipe, but most potatoes will work. Feel free to try this method with white baby potatoes, medium potatoes, or large russet potatoes.
SEASONINGS: To add flavor, vegetable oil, minced garlic, chopped parsley, salt and pepper are tossed with the cooked potatoes. This step is optional but is easy and delicious. Feel free to season with your favorites. Melted butter, sour cream, hot sauce, or salsa would all taste great on these cooked potatoes.
How To Cook Potatoes In The Microwave
This method is one of the easiest ways to cook potatoes!
- Scrub outsides, slice off unwanted bits, and poke outside skin with a fork multiple times.
- Mix together seasoning ingredients according to full recipe instructions below.
- Microwave potatoes on a plate for 9-11 minutes. Poke with a fork to check for tenderness.
- Toss with seasoning, serve and enjoy!

How To Microwave Potatoes
Ingredients
- 1 ½ lbs small potatoes
- 2 Tbsp olive oil
- 2 garlic cloves - minced
- ⅓ cup chopped parsley
- ½ tsp salt
- ¼ tsp ground black pepper
Instructions
- Wash potatoes and slice off any unwanted pieces. Use a fork to prick the sides of the potatoes in multiple places.
- Add olive oil, minced garlic, parsley, salt and pepper to a bowl. Mix together. Set aside.
- Place potatoes on a microwafe safe plate in a single layer. Microwave for 9-11 minutes. Check doneness by poking potatoes with a fork.Carefully remove plate from microwave using oven mitts (it will be hot).
- Toss potatoes with the dressing.
- Serve and enjoy!
