I love roasting asparagus in the oven because it’s one of the easiest ways to cook it. The high heat caramelizes the edges and brings out the veggie's natural sweetness, while the stalks stay tender. Plus, it’s so versatile—you can serve it as a side with almost any meal!
Recipe Ingredients
- 1 lb fresh asparagus
- 2 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp ground black pepper
- fresh lemon juice - optional
- grated parmesan cheese - optional

STEP 1: Prep
Preheat the oven to 400°F. Line a baking sheet with parchment paper or lightly spray with nonstick cooking spray.
STEP 2: Prep Asparagus
Rinse 1 lb fresh asparagus and pat dry with a kitchen towel. Trim the tough ends by snapping them off with your fingers or using a knife to cut them off - about 1 inch or so.
STEP 3: Season Asparagus
Add the trimmed asparagus to a large bowl (or use the baking sheet for this step). Drizzle them with 2 tablespoon olive oil, ½ teaspoon garlic powder, ½ teaspoon salt, and ¼ teaspoon ground black pepper.
STEP 4: Roast Asparagus
Arrange the asparagus in a single layer on the baking sheet. Roast the asparagus in the preheated oven for 12-15 minutes, depending on the thickness of the stalks. The asparagus should be tender when poked with a fork but not too soft. The tips should be slightly crispy.
STEP 5: Season Asparagus
Remove the asparagus from the oven and transfer to a serving dish. Serve and enjoy!
OR, if you want a bit more flavor, you can drizzle with freshy squeezed lemon and sprinkle with a bit of freshly grated Parmesan cheese.
