MUSHROOMS: I used white mushrooms for this recipe – as they soak up the marinade they will naturally turn a darker color. Brown mushrooms will also work. For the most budget friendly version, consider buying loose bulk mushrooms from the grocery store.
MARINADE: These marinated mushrooms are so good because of the tangy dressing. If you’re short on time, a simple store-bought salad dressing will also work. You’ll want to buy an oil and vinegar combo.
How To Make Marinated Mushrooms
This easy recipe can be made very quickly. Here are the basics.
- Clean and slice the mushrooms. Add them to a large dish.
- Prep the marinade by mixing all ingredients according to the full recipe below.
- Combine the mushrooms and marinade. Toss together and chill for a minimum of 2 hours, and up to 3 days for a deeper flavor.

- Mushrooms are like a sponge and will soak up excess water. For this reason, it’s best to use a damp cloth and wipe the outsides of them to clean, versus rinsing under water.
- Save the leftover marinade for another recipe. Use it as a salad dressing, or freeze it in an ice cube tray for a future marinated vegetable salad.

Marinated Mushrooms
Ingredients
- 1 lb mushrooms, sliced - 454 g
- ½ cup olive oil
- ½ cup vinegar - food-grade
- 1 Tbsp honey - or maple syrup
- 4 garlic cloves - minced
- ¼ cups chopped parsley
- 1 tsp red pepper flakes - crushed red pepper
- ½ tsp salt
- ¼ tsp ground black pepper
Instructions
- Wipe the outsides of the mushrooms with a cloth or paper towel to remove any dirt.
- Mix together the marinade in a bowl: olive oil, vinegar, minced garlic, parsley, chili flakes, honey, salt and pepper.
- Add sliced mushrooms to a large shallow dish. Drizzle the marinate overtop and toss together.
- Cover with a lid or plastic wrap and place in the fridge for minimum 1 hour, or up to 3 days, stirring occassionally.
- Use slotted spoon to transfer to a serving dish. Discard excess marinade.
- Mushrooms can be served chilled or at room temperature. Serve and enjoy!
