This quick taco casserole is delicious, easy to make, and perfect for busy nights—don’t forget to add toppings for extra flavor!

Recipe Overview
I absolutely LOVE this taco casserole recipe! It’s my go-to for an easy weeknight meal, packed with delicious flavors. It couldn’t be simpler to make—everything cooks together in a skillet, then gets spread over crushed tortillas in a casserole dish. Just sprinkle on some cheese and bake for 20 minutes!
You can serve it with or without fresh toppings, but I highly recommend adding them for extra flavor. A big dollop of sour cream was my favorite! And the leftovers make a fantastic lunch, too!

Recipe Ingredients
- 1 pound lean ground beef
- 1 packet taco seasoning
- 2 cups crushed tortilla chips
- 1 cup black beans - drained and rinsed
- 1 cup corn - frozen or canned
- 2 cups salsa
- 2 cups shredded Mexican cheese blend - or use cheddar cheese
How To Make A Taco Casserole

STEP 1: Preheat your oven to 375°F.
STEP 2: In a frying pan, cook 1 lb of lean ground beef until browned, then remove any excess grease by swishing a folded paper towel around with a spatula. Stir in 1 packet of taco seasoning.
STEP 3: In the frying pan with the cooked ground beef, mix in 2 cups salsa, 1 cup black beans, and 1 cup corn. Add in 1 cup of shredded cheese and mix everything together.
STEP 4: In a 9x13 baking dish, spread 2 cups crushed tortilla chips evenly at the bottom of the dish.
STEP 5: Spread the cooked ground beef mixture on top, then sprinkle on the remaining 1 cup of shredded cheese.
STEP 5: Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and all ingredients are warmed through. The taco casserole can now be served as-is or if you want to add fresh toppings, see the next step (step 6).
STEP 6: Sprinkle on fresh toppings like green onion, tomatoes, olives, shredded lettuce, cilantro, hot sauce, chopped bell pepper, salsa and sour cream. Scoop into bowls and it's ready to serve.
How To Store Leftovers
- Refrigerate - Leftovers can be stored in an airtight container for up to 3-4 days.
- To Reheat - Just reheat in the microwave or preheat your oven to 350°F. Place the taco bake in an oven-safe dish and cover it with aluminum foil to prevent it from drying out. Bake for about 15-20 minutes or until heated through.
