Some days you just need an easy soup recipe for dinner. And this healthy hamburger soup recipe is a lifesaver. It’s easy on the budget, piled with vegetables, and perfect for busy days.
This is a simple soup. It’s easy without a lot of fuss, and it’s delicious! My husband loves hamburger soup and remembers it well from his childhood. This is my healthier version of the classic hamburger soup that you can make in either the slow cooker or on the stovetop.
Healthy Hamburger Soup Ingredients
This soup comes together with three main components:
- Ground Beef – I used 1 lb of extra lean ground beef for this recipe.
- Vegetables – You’ll need yellow onion, carrots, celery, frozen corn, frozen peas and diced tomatoes.
- Broth Flavoring – To flavor the soup you’ll need 1 carton of beef broth, tomato sauce, tamari sauce (or soy sauce), salt and pepper.
How To Make Healthy Hamburger Soup
This recipe is easy to prepare. You can make it in a slow cooker or the stove top. Here’s an overview of how to do both:
- Cook Ground Beef – Add cooking oil, garlic and onions to a frying pan over medium-high heat. Cook until the onions turn translucent. Now add the ground beef and break it into pieces. Cook until the beef is no longer pink.
- Slow Cooker Instructions – Add the ground beef mixture, all veggies, tomato sauce, tamari sauce, beef broth, salt and pepper to the slow cooker. Cook on low for 6-8 hours, or high for 3-5 hours. The soup is done when carrots are soft when poked with a fork.
- Cook On Stovetop – Add the ground beef mixture and all other ingredients to a large pot on the stove. Bring the soup to a boil, then reduce the heat to let simmer until the carrots are soft. This will take 20-30 minutes.

Healthy Hamburger Soup
Ingredients
- 1 Tbsp cooking oil - coconut oil, avocado oil, etc.
- ½ yellow onion - chopped
- 3 garlic cloves - minced
- 1 lb extra lean ground beef
- 4 carrots - peeled and chopped
- 3 celery sticks - chopped
- 1 cup frozen corn
- 1 cup frozen peas
- 1 14 oz canned diced tomatoes - drained
- 1 14 oz can tomato sauce - or 1½ cups
- 2 Tbsp tamari sauce - or soy sauce
- salt and pepper - to taste
- 1 beef broth - 5 cups
Instructions
- In a frying pan over medium high heat, add the minced garlic and onions. Cook 1-2 minutes until onion turns translucent. Add in the ground beef and break into small pieces with a spatula. Cook until the ground beef is no longer pink. Drain any excess liquid.
- Slow Cooker Instructions: Add the ground beef mixture to a slow cooker along with carrots, celery, corn, peas, diced tomatoes, tomato sauce, tamari sauce (or soy sauce), salt, pepper, and broth. Mix together and cook on low for 6-8 hours.
- Soup can be served when carrots are soft when poked with a fork.
Recipe Notes:
- Storage In Fridge: Let soup cool completely then add to an airtight container and store in the fridge for up to one week.
- Freezer Instructions: To freeze, let cool completely then add to a large Ziploc freezer bag. Remove any excess air and seal tightly. Lay flat in the freezer. Can be frozen for up to 3 months.
- You can also cook this soup on the stovetop. Here are the instructions: Make the ground beef mixture in a frying pan using the instructions above. Then add the ground beef mixture along with carrots, celery, corn, peas, diced tomatoes, tomato sauce, tamari sauce (or soy sauce), salt, pepper, and broth to a large pot. Bring to a boil, then reduce the heat and let simmer for 20-30 minutes or until carrots are soft when poked with a fork. Use a soup ladle to pour into bowls, serve and enjoy!
