One Pot Chicken Thighs, Tomatoes and Sweet Potatoes

This one-pot chicken, tomatoes and sweet potatoes recipe uses simple ingredients to create a tasty meal.

Chicken thighs are seared in a pot with tomatoes, sweet potatoes and onions. All topped with shredded mozzarella cheese. It’s an easy recipe that can be served with rice, quinoa or pasta noodles.

Recipe Ingredients

Only five main ingredients plus spices are used for this easy recipe! When mixed together you get an easy one-pot meal. Here’s an overview of what you’ll need with variations:

  • CHICKEN: 4-8 skin-on, bone-in chicken thighs are used for this recipe. The amount will depend on how many you need for your family.
  • VEGETABLES: Sweet potatoes are peeled and chopped into small bite-size chunks. Chopped onion and a large can of diced tomatoes are added as well.
  • SPICES: Onion powder, chili powder, garlic powder, paprika, salt, and pepper are used for flavor.
  • CHEESE: Shredded mozzarella is sprinkled on top after everything is cooked.
  • VARIATIONS: Any style of chicken will work for this recipe. Swap the sweet potatoes or regular potatoes if preferred. You could also add some frozen vegetables, broccoli florets, mushrooms or chopped bell pepper.

How To Make One-Pot Chicken with Tomatoes and Sweet Potatoes

Everything is cooked in one pot, making clean-up easier. Here’s a quick overview with full instructions in the recipe card at the bottom of this post.

  1. Cook the onion and sweet potatoes in a large pot until tender. Season with spices. Scoop into a bowl.
  2. Sear the chicken thighs on both sides. Add the back in the sweet potatoes and diced tomatoes. Arrange them around the chicken. Cook until juices run clear in chicken.
  3. Scoop onto plates with optional rice, pasta or quinoa.

Leftover chicken thighs with sweet potatoes and tomatoes can be stored in an airtight container in the fridge for up to 3-4 days. Reheat in the microwave or in the oven.

  • This recipe is easy to adapt. Use boneless skinless chicken thighs, chicken breasts, or a store-bought rotisserie chicken. Swap sweet potatoes for regular potatoes.   • Peel and chop the sweet potatoes into small bite-size cubes. Chop the onion. Drain the diced tomatoes.

  • Season the salt and pepper and rub it in on both sides.

  • Heat oil in a large pot over medium-high heat. Add the chopped sweet potatoes and onion. Cook 2-3 minutes.

  • Cook until the sweet potatoes are tender when poked with a fork. Add more cooking oil if needed.

  • Add the sweet potatoes to a bowl and set aside for now.

  • Brown the chicken thighs on both sides, about 2-3 minutes each side.

  • Add in the diced tomatoes and cooked sweet potatoes. Arrange around the chicken.
    Cook until the chicken reaches 165°F when poked with a meat thermometer and the juices run clear. The pot can be covered to help speed up the cooking process.

  • Sprinkle mozzarella cheese over top of the chicken and cook until melted, 1-2 minutes. Remove from heat.

  • Add chicken and sweet potato mixture to a plate. Can be served with rice, pasta or quinoa.
