Fruit Pizza Recipe
Ingredients
- 16 oz refrigerated cookie dough - softened at room temperature for 1 hr
- 8 oz cream cheese - softened to room temperature
- 2 Tbsp unsalted butter - softened to room temperature
- 2 tsp vanilla extract
- 2 cups powdered sugar
- 1 ½ cups sliced strawberries
- 2 kiwis - skin removed and sliced
- ½ cup blueberries
- 9 oz canned mandarin orange sections - drained and pat dry with a paper towel
Instructions
- Preheat the oven to 350℉. Spray a round pizza pan with non-stick cooking spray or line with parchment paper.
- Let the 16 oz refrigerated cookie dough sit at room temperature to help it soften. Use the palm of your hand and fingertips to press it out into the shape of the pizza pan. Place in the oven and bake for 15 minutes or until golden brown. Remove from oven and let cool completely before adding frosting.
- In a large bowl, beat 8 oz softened cream cheese, 2 Tbsp softened unsalted butter, 2 cups powdered sugar, and 2 tsp vanilla extract. Use a hand mixer. It will be clumpy at first then turn smooth and creamy after 2-3 minutes.
- Spread the cream cheese frosting on the cooled sugar cookie with a spatula. Leave a little bit of cookie exposed around the edges.
- Wash and slice 1 ½ cups sliced strawberries, 2 sliced kiwis, ½ cup blueberries, and 9 oz canned mandarin orange sections. Arrange the fruit in circles, starting with the outer edge and working inward until you reach the center. Serve immediately or place the sugar cookie in the fridge until ready to serve. Slice the fruit pizza using a knife or pizza cutter.
Recipe Notes:
