Herb quick bread is a great recipe that’s both sweet and savory. This bread comes together fast (hence why it’s called quick bread) without any yeast or rising.

Flour, flaxseed, various spices, milk, egg and honey are all mixed together, topped with sesame seeds and baked in a loaf pan.

This bread is so easy and pairs nicely with our shrimp asparagus pasta, a simple healthy onion garlic tomato soup, casseroles, spaghetti or our pork and squash stew.

Fast Homemade Bread

  • It’s so easy to make. The best thing is that everything comes together in less than 10 minutes in a large bowl, then baked in a loaf pan for 50 minutes.
  • This bread is moist, sweet and savory, and full of flavor thanks to fresh herbs.
  • It can be sliced and frozen for future dinner recipes or used as sandwich bread.
  • Serve fresh or toasted with regular butter or herb butter, or use as a scoop in soups and stews.
  • This bread costs a fraction of the price of many loaves from the grocery store! I used ingredients from larger packages (ex. 1 cup flour from a large bag) so the cost was very inexpensive, only $1.50! (prices will vary slightly depending on where you live). 

What Is Quick Bread?

Quick bread takes less time to make than traditional yeast bread recipes. It uses baking powder and baking soda as leavening agents. Because of this, they don’t require yeast or kneading as traditional bread does. The result is less fuss, less work, and a loaf of delicious easy bread that the whole family will love.

Recipe Ingredients

  • FLOUR: All-purpose flour, whole wheat flour and ground flaxseed are combined together for the base of the recipe.
  • HERBS: A combination of dried fragrant herbs including dill, oregano, basil and thyme create the perfect flavor. If you’re in a pinch, use Italian herb seasoning instead.
  • HONEY: You can use either honey or maple syrup for sweetener.
  • SESAME SEEDS: Sprinkled on top of the bread dough just before baking. This ingredient is optional.
  • OTHER: This recipe also uses baking powder, baking soda, salt, egg, vegetable oil (or olive oil) and milk.

VARIATIONS: Add garlic powder, onion powder, parmesan cheese, old cheddar cheese or fresh chives for a different flavor.

How To Make Herb Quick Bread

  1. Mix together all-purpose flour, whole wheat flour, ground flaxseed, baking powder, baking soda, salt and all herbs (dried dill, oregano, basil, thyme).
  2. In a separate bowl beat one egg, then add wet ingredients according to the full recipe instructions below.
  3. Mix the dry ingredients with the wet ingredients. Transfer dough into a greased loaf pan. Sprinkle top of the loaf with sesame seeds and bake until a toothpick comes out clean when poked through the center. Let cool on a wire rack. Slice with a bread knife, serve and enjoy!

Leftovers can be stored in a large airtight container on the counter or fridge for up to 1 week. This bread also freezes nicely. I recommend slicing the bread and letting it cool completely before adding to a freezer bag. For maximum freshness, bread can be frozen for up to 3 months.

  • Preheat the oven to 350°F.
  • Mix together the dry ingredients in a medium mixing bowl: all purpose flour, whole wheat flour, ground flaxseed, baking powder, baking soda, dried dill, oregano, basil, thyme and salt.

  • In a separate bowl, add milk, egg, honey and vegetable oil. Beat together.

  • Add the dry ingredients to the wet ingredients. Mix until just combined.

  • Grease a loaf pan with non-stick cooking spray.

  • Spoon batter into the loaf pan and spread out evenly with a spatula. Sprinkle with sesame seeds.

  • Bake for 45-50 minutes or until a toothpick comes out clean when poked in the center. Let cool for 10 minutes, then transfer to a rack to cool completely. Slice with a bread knife, serve and enjoy!
