Need a quick and easy side salad recipe? Avocado quinoa coleslaw is whipped up with fresh quinoa and a store-bought coleslaw mix.
First, the quinoa is cooked in a pot, then tossed with shredded veggies and chopped onions. The salad is tossed with a homemade creamy avocado dressing and then chilled in the fridge until ready to serve.
Avocado Quinoa Coleslaw
- This delicious salad is healthy and so easy. It requires only three main ingredients plus a creamy homemade salad dressing that’s similar to our easy homemade salad dressing recipes.
- Today I’m using a store-bought coleslaw mix to make life easier. The one I used had shredded broccoli, cabbage and carrots. This will save you a bunch of time! You can use any style of coleslaw mix that isn’t already mixed with dressing.
- Only three main fresh ingredients are needed for the dressing. It can be whipped up in less than 2 minutes!
- Simple salads like this are an easy side dish to serve with baked chicken legs, barbecued steak, air fryer hamburgers, with ham or marinated pork chops.
- You can use this as meal prep lunches for the week, and serve it at a picnic or potluck.
Salad Ingredients
- QUINOA: This recipe uses 1½ cups of cooked quinoa (¾ cup of raw quinoa with 1½ cups of water when cooking). If you don’t want to use quinoa, you could substitute for brown rice.
- COLESLAW: Any store-bought bag of shredded veggies will work. I used a bag of broccoli slaw with shredded broccoli, red cabbage and carrots.
- ONION: You’ll need 1 cup of chopped yellow onion or red onions.
- DRESSING INGREDIENTS: The homemade dressing is made with mayonnaise, mashed avocado, apple cider vinegar, salt and pepper. You can use vegan mayonnaise or regular mayonnaise. I like to use avocado oil mayonnaise. You can substitute
- VARIATIONS: top with chopped green onions, bell pepper, black beans for protein, sesame seeds.
How To Make Avocado Quinoa Coleslaw
- Cook Quinoa – The quinoa needs to be cooked before you can make this recipe. You’ll need 1½ cups of cooked quinoa.
- Mash avocado with a fork in a small bowl. Stir in mayonnaise, apple cider vinegar, salt and pepper. Mix everything together according to the full recipe instructions below.
- Chop the onion. Add it to a large bowl with coleslaw mix, cooked quinoa and salad dressing. Mix everything together.
- Chill the salad for at least 2 hours. Serve and enjoy!
How To Cook Fluffy Quinoa

- Add quinoa and water to a pot. Bring to a boil then reduce to let simmer until the water cooks down and is absorbed by the quinoa (Water can be substituted with vegetable broth for more flavorful quinoa).
- Do not stir during this time – Instead, use a spoon to gently move quinoa to see if there’s any water left at the bottom of the pot. If there isn’t any, remove it from heat and let it sit covered with a lid for 10 minutes.
- Fluff with a fork – now you can use a fork to fluff up the quinoa. When you wait until the very end, you avoid creating mushy quinoa that nobody likes.

Instructions

- In a bowl, mash the ripe avocado with a fork.
- Add in the mayonnaise, apple cider vinegar, salt and pepper. Mix together.
- Add cooked quinoa, coleslaw mix, and chopped onion to a large bowl.
- Add the avocado salad dressing.
- Mix everything together. Cover and let chill in the fridge for 2 hours before serving.
