Butterscotch bird’s nest cookies are no bake and are made with only four ingredients. Melted white chocolate and butterscotch chips are mixed with chow mein noodles to create little bird’s nests with Cadbury chocolate eggs.

Easy Spring Cookies
There are a variety of ways to make bird’s nest cookies, including chocolate and coconut. Sometimes thumbprint cookies are also referred to as birds nests. Today’s cookies are made with chow mein noodles.
- You only need 4 ingredients to make this recipe. It couldn’t be easier!
- The chow mein noodles are crunchy and break apart easily to create the perfect rustic-looking nests.
- Cadbury chocolate eggs are the perfect colorful additions to this recipe.
- The entire recipe can be put together in less than 20 minutes. It’s no-bake, and only requires melted chocolate which can be done on the stovetop or microwave.
Recipe Ingredients
CHOW MEIN NOODLES: Chow mein noodles are typically used in delicious Chinese stir-fries. They can be found sold in a bag without seasonings at the grocery store near other noodle types. This style of noodle is slightly thicker and makes the perfect bird’s nest shape!
CHOCOLATE: A combination of white chocolate chips and butterscotch chips are melted together. You could easily replace white chocolate for dark or milk chocolate if you prefer.
CHOCOLATE EGGS: These candy-covered chocolate eggs are from my local bulk food store. I used Cadbury mini eggs in my Easter blondies, which will also work perfectly for this recipe. Another easy idea is to use yogurt-covered raisins as I did in these chocolate coconut birds nest cookies.
How To Make Bird’s Nest Cookies With Chow Mein Noodles
It’s simple ideas like these that are so fun to make with kids!
- Melt the butterscotch chips and white chocolate chips in the microwave.
- Add them to chow mein noodles in a large bowl according to the full recipe instructions below.
- Scoop and form them into nest-like shapes. Create a well in the center.
- Top with candy-covered chocolate eggs and let sit for 20 minutes before serving.

- You can easily substitute white chocolate or butterscotch chips for dark or milk chocolate. For example, the recipe can be made with 3 cups of milk chocolate chips.

Butterscotch Bird’s Nest Cookies with Chow Mein Noodles
Ingredients
- 1 ½ cups butterscotch chips
- 1 ½ cups white chocolate chips
- 12 oz chow mein noodles - 400 g
- 1 cup Cadbury mini eggs
Instructions
- Add butterscotch chips and white chocolate chips to a microwave-safe bowl. Microwave in 30-second increments, stirring each time, for a total of 1-2 minutes (until fully melted). Mix together.
- Add chow mein noodles to a large bowl. Drizzle the melted chocolate over top and mix together evenly. It's ok to break the noodles during this step.
- Grab 2 Tbsp worth of noodles and form into a nest shape with a small hole in the center. Place on a plate or baking sheet lined with parchment. Add 3 Cadbury mini eggs on top. Repeat with the rest of the ingredients, making approx. 15 nests. Let sit for 20-30 mintues for chocolate to harden. Store cookies in an airtight container on counter or in fridge up to 4 days. Bird's nest portion can also be frozen up to 3 months.
